Apr 12 2012 - Cocktails with a cool twist

There is nothing that irks travellers more than a delayed flight. Last Tuesday, I found myself in that exact predicament. I had three hours to kill in Terminal 3 and all I wanted to do was be on a plane that was heading for Krabi.

Desperate to make time go by faster, my friends and I walked aimlessly around the terminal and stumbled across bar' 75 at Crowne Plaza Changi Airport.

Since we had some time to kill, why not do it with a cocktail in hand? Plus, having one or two drinks will help me with my nerves during take off.

When you walk through the entrance of the bar, you can't help but notice that the bar's decor was inspired by the glamour of the 1970s.

The 70s theme is accented by backlit graphic panels, cozy booths in vibrant colourful fabrics and 'fluro art' inspired by Andy Warhol's famous series of painting from the era.

As we sat on their comfortable tan leather club chairs, the waiter presented us the menu and informed that they were having a special on cocktails.

Aptly titled, the “Molecular Mixology” spectacle, the waiter further elaborated that bar' 75 is giving a new twist to four traditional cocktails – Lychee Martini, Mimosa, Coconut Martini and Amaretto.

When asked what sets their cocktails apart from the traditional ones, the waiter patiently explained that each molecular mixology cocktail is meticulously prepared using the technique of basic spherification.

What this means is that you will be able to find a jellification of alcohol mixture in your cocktails (think black tapioca balls in bubble tea).

Since we had already preempt ourselves to be in a holiday mood, we decided to be spontaneous and ordered one of each.

Lychee Martini $22++ - A good lychee martini should smell and taste like lychee. They've managed to capture the sweet fragrance and flavour of the fresh lychee fruit and pair it is perfectly with vodka.

Mimosa $22++ -
This cocktail of orange juice and champagne is simple, yet delightful that makes an excellent brunch cocktail.

Coconut Martini (must-try) $20++ - 
When I took my first sip, images of exotic and tropical islands immediately conjured up in my head. The taste of the coconut was simply heavenly and leaves you feeling at ease.

Amaretto sour $20++ - This tropical drink leaves you with a sweet, almond aftertaste in your mouth.

The Whether Girl's verdict: Having drinks in Changi Airport may seem out of the way but the intimate setting makes it a perfect spot for a date night or a quiet night out with the girls. I recommend coming down just for the coconut martini and you need to experience drinking cocktails with spheres in them! The explosion of flavours as the sphere burst in your mouth is indescribable.

Happened to chance upon this bar when I was at Crowne Plaza. Truly a spectacle I must say. The molecular mixology - a set of delightful concoctions that leaves one's tastebuds craving for more. In fact, the lychee martini itself warrants a return trip to Bar'75. 4.5/5 for the molecular mixology!
